Job Description Summary

Pembroke College seeks a Senior Hospitality Assistant to oversee food and beverage services for internal and external events, ensuring exceptional customer experiences and efficient operations.

Responsibilities

  • Assist in managing food and beverage services for all college events, including cafeteria lunches, fine dining, college feasts, buffet services, student café, and bar.
  • Liaise with the High Table/Hall Butler and Front of House Manager to effectively communicate event arrangements to the front-of-house team.
  • Help manage staffing rotas for permanent and casual staff, allocating duties on a day-to-day basis.
  • Ensure high-quality presentation, preparation, and service of all meals to both college and commercial customers.
  • Assist in identifying training needs for employees and inform relevant managers.
  • Order, control, store, and issue wine from the Cellar and Buttery Wines when required.
  • Maintain records of diner numbers, wine consumption, and additional client requests.
  • Uphold agreed service standards and treat customers respectfully, handling requests professionally.
  • Delegate, train, and supervise casual staff to ensure proper task completion.
  • Oversee equipment, stock, and departmental premises security in the absence of senior managers.
  • Maintain a safe environment for college members, staff, and the public in front-of-house areas.
  • Assist in completing and reviewing risk assessments.
  • Report maintenance issues to relevant managers.
  • Adhere to instructions from the High Table/Hall Butler, Front of House Manager, and Catering and Events Manager.
  • Ensure cleanliness and hygiene in all food and beverage service areas.
  • Supervise table setting and clearing according to established standards.
  • Organize setup and clearing of conference and meeting rooms, including buffets, lunches, and dinners.
  • Monitor food charges and portion sizes.
  • Coordinate with the Head Chef/Sous Chef on food presentation and delivery.
  • Assist in managing and securing the College Silver.
  • Utilize and train others in the Monika HACCP system and till operations.
